Even that was all consumed after two days, and the patients had to try to choke down fresh fish, just boiled in water, without salt, pepper or butter; mutton, beef, and potatoes without the faintest seasoning.

Spreading Haddock
First pre-heat the oven at 350degrees.
Take approximately 3lbs of fresh haddock,
Season it..
With a compound seasoning of salt
Oregano, pepper/red pepper, garlic powder,
Onion powder, and celery salt.
Gently rub these ingredients into the awaiting haddock!
One baking dish is needed.
Pour one full cup of water/maybe more into dish.
Sprinkle Basil onto the water. YES...B-A-S-I-L.!
Lay that haddock down.
If you have bread crumbs...
Now is the opportunity to crumb this haddock!
Get a stick of butter.
Slice thin butter slices...
And place them on that haddock.
Final touch before slipping this into the oven...
Toss some parsley...on the haddock!
Cover with aluminum foil.
Place this dish into the over for about 30mins!
Next!
Romaine makes the beginnings of a good salad!
Get some fresh Romaine. Wash it.
Get a platter and chop this thing up!
Tomatoes? Fresh? Get 'em! Dice 'em if you wanna!
One large Vadalia Onion. One Green Pepper.
And one jar of Roasted Peppers.
Slice this mess up into a mix.
Yes...
Of course,
Put it on the platter. Remember? Presentation!
There's never been a time for haddock,
As it's time for haddock now!
It should be caressing the kitchen...
And your taste buds by now!
Take it out of the oven.
Let it cool for about 10-15 minutes!
Look at that platter!
Now look at that haddock!
Put that haddock on top of those lucious vegetables!
Take some virgin oil! Yes...make it 'virgin'.
At this point you just want a hint of oil.
NOW...
If you really are serious about your taste buds...
A mix of vinegar/white zinfandel/olive oil,
Is a nice topping!
When you want to do something for yourself...
Spreading Haddock is recommended!
There's nothing like it!
'How many does it feed? '
Why? You're not getting none of this!
That's why I went through the trouble
Of telling you how to make it!
How many does it feed?
One!
Me...Sorry 'bout that!
But this is a meal for the 'survivors! '
LOL...just joking! Have some!
Note: This is my own creation! 'Yes. You have my permission
to use it and treat yourself. You're gonna love it! '
Spreading Haddock...LOL

The 'Potato' Poem
I love potatoes chopped up into chunky chips.
I love spicy potato wedges, served up with dips.
I love potato slices which have been fried in a pan:
Of sautéed potatoes, I am the world's biggest fan.
I love potatoes which have been pummelled and bashed
With butter and milk to make a real light, fluffy mash.
Jacket potatoes, I find a bit dry, but with a nice filling
Such as chilli, to give them a try, I am more willing.
With breakfast, I love hash browns or potato cakes,
And I love potatoes mixed up with leeks in a bake.
Crispy, golden potatoes, served up with Sunday roast
Are among the kinds of potato which I love the most.
Mixed in soups and casseroles, I love potatoes diced.
On top on minced beef hotpot, I love potatoes sliced.
Fluffy potato stuffed inside a crispy potato croquette
Is also rather nice, and, for me, it is another safe bet.
I love potatoes cut into crisps: the slices, wafer thin,
And, as a starter, I simply love loaded potato skins:
I do adore a delicious dish of Bombay potato curry:
For me, it is a taste which I won't forget in a hurry.
I like potatoes diced up with creamy mayonnaise,
Served up with salad on really hot summer days.
But I don't like potatoes which have been boiled:
From potatoes, cooked this way, in horror, I recoil.

Ballade 2
In Antwerp, Bruges, Ostend and Ghent
I used to order food with flair,
But in every inn to which I went
They always brought me, with my fare,
With every roast and mutton dish,
With boar, with rabbit, pigeon, bustard,
With fresh and with salt-water fish,
Always, never asking, mustard.
I ordered herring, said I'd like
Carp for supper at the bar,
And called for simple boiled pike,
And two large sole, when I ate at Spa.
I ordered green sauce when in Brussels;
The waiter stared and looked disgusted;
The bus boy brought in with my mussels
As always, never asking, mustard.
I couldn't eat or drink without it.
They add it to the water they
Boil the fish in and-don't doubt it-
The drippings from the roast each day
Are tossed into a mustard vat
In which they're mixed, and then entrusted
To those who bring-they're trained at that-
Always, never asking, mustard.
Prince, it's clear a spice like clove
can drop its guard. It won't be busted.
There's just one thing these people serve:
Always, never asking, mustard.

Hot Potatoes
My baby woke me up this mornin
She said get down that labour exchange,
And if you dont come home with a job son,
Youll get no dinner to-day.
You gotta secure me a weekly workin wage.
Youll get no more fancy cookin,
Youll get no more apple pie,
Youll just get those plain hot potatoes
To satisfy your appetite.
La la la la la la potatoes,
Boiled, french fried, any old way that you wanna decide.
Hot potatoes, yeh,
I want your lovin every single day.
I said I dont need your fancy cooking,
I like the simple things in life,
Just give me those plain hot potatoes
And Ill be well satisfied,
Theyll satisfy my appetite.
La la la la la la potatoes,
Boiled, french fried, any old way that you wanna decide.
Hot potatoes, yeh,
I want your lovin 60 minutes an hour,
I want your lovin 24 hours a day,
I want your lovin 7 days a week.
Yeh, yeh, oh yeh.
I want your love, I need your love,
But all I get is hot potatoes
When I come home late at night
To satisfy my appetite.
Dont give me no more potatoes,
Boiled, french fried, any old way you wanna decide.
Hot potatoes,
I want your lovin every single day.
I want your lovin
La la la la la la potatoes,
Boiled, french fried, any old way that you wanna decide.
Hot potatoes, hot potatoes, yeh.

I'll Eat The Fish
I use to like it well done not rare.
Prepared tenderly as if one cared.
I had to have my steak well cooked and baked.
I use to slice it into pieces split,
With fried potatoes...
And some wine to slowly sip.
But when I changed my diet I got into fish.
And I discovered baked fish was quite delicious.
That was it.
And today there is no beef for me,
I'll eat the fish!
I use to slice my beef into tiny pieces split.
But when I changed my diet I got into the fish.
That was it.
That was it.
And today there is no beef for me I will eat the fish!
That is it for me...
Today I'm on the fish!
I use to like it well done not rare.
Prepared tenderly as if one cared.
I had to have my steak well cooked and baked.
I use to slice it into pieces split,
With fried potatoes...
And some wine to slowly sip.
But today there is no beef for me I will eat the fish!
That is it for me...
Today I'm on the fish!
Today there is no beef for me I will eat the fish!
That is it for me...
Today I'm on the fish!
Even fish sticks,
Will be eaten very quick.
I will handled eating up those fish sticks very quick.
Especially if they're deep fried and battered!

The Green-Hand Rouseabout
Call this hot? I beg your pardon. Hot!—you don’t know what it means.
(What’s that, waiter? lamb or mutton! Thank you—mine is beef and greens.
Bread and butter while I’m waiting. Milk? Oh, yes—a bucketful.)
I’m just in from west the Darling, ‘picking-up’ and rolling wool.’
Mutton stewed or chops for breakfast, dry and tasteless, boiled in fat;
Bread or brownie, tea or coffee—two hours’ graft in front of that;
Legs of mutton boiled for dinner—mutton greasy-warm for tea—
Mutton curried (gave my order, beef and plenty greens for me.)
Breakfast, curried rice and mutton till your innards sacrifice,
And you sicken at the colour and the smell of curried rice.
All day long with living mutton—bits and belly-wool and fleece;
Blinded by the yoke of wool, and shirt and trousers stiff with grease,
Till you long for sight of verdure, cabbage-plots and water clear,
And you crave for beef and butter as a boozer craves for beer.
Dusty patch in baking mulga—glaring iron hut and shed—
Feel and smell of rain forgotten—water scarce and feed-grass dead.
Hot and suffocating sunrise—all-pervading sheep yard smell—
Stiff and aching green-hand stretches—‘Slushy’ rings the bullock-bell—
Pint of tea and hunk of brownie—sinners string towards the shed—
Great, black, greasy crows round carcass—screen behind of dust-cloud red.
Engine whistles. ‘Go it, tigers!’ and the agony begins,
Picking up for seven devils out of Hades—for my sins;
Picking up for seven devils, seven demons out of Hell!
Sell their souls to get the bell-sheep—half-a-dozen Christs they’d sell!
Day grows hot as where they come from—too damned hot for men or brutes;
Roof of corrugated iron, six-foot-six above the shoots!
Whiz and rattle and vibration, like an endless chain of trams;
Blasphemy of five-and-forty—prickly heat—and stink of rams!
‘Barcoo’ leaves his pen-door open and the sheep come bucking out;
When the rouser goes to pen them, ‘Barcoo’ blasts the rouseabout.
Injury with insult added—trial of our cursing powers—
Cursed and cursing back enough to damn a dozen worlds like ours.
‘Take my combs down to the grinder, will yer?’ ‘Seen my cattle-pup?’
‘There’s a sheep fell down in my shoot—just jump down and pick it up.’
‘Give the office when the boss comes.’ ‘Catch that gory sheep, old man.’
‘Count the sheep in my pen, will yer?’ ‘Fetch my combs back when yer can.’
‘When yer get a chance, old feller, will yer pop down to the hut?
‘Fetch my pipe—the cook’ll show yer—and I’ll let yer have a cut.’
Shearer yells for tar and needle. Ringer’s roaring like a bull:
‘Wool away, you (son of angels). Where the hell’s the (foundling) WOOL!!’
Pound a week and station prices—mustn’t kick against the pricks—
Seven weeks of lurid mateship—ruined soul and four pounds six.
What’s that? waiter? me? stuffed mutton! Look here, waiter, to be brief,
I said beef! you blood-stained villain! Beef—moo-cow—Roast Bullock—BEEF!

Sit There And Eat It
OH!
So you want to 'mince' something?
You come in here ready to dice...
With me?
Well...
Let me tell you something right now...
You take this knife!
You see that roasted garlic?
Vadalia onion, parsley and garden tomato?
You dice them first!
You mince that together.
See that sauce pan?
DO YOU?
Put some olive oil in that pan!
Add some seasalt.
Now you add some fresh ground pepper.
Wait until that oil heats!
DO YOU HEAR ME?
DO YOU?
Do you see that cod sitting over there?
Get the butter!
Get the unsalted butter.
What do you mean there is only salted butter?
Then USE it!
Melt it separately.
Dip that cod in that butter.
Throw that diced stuff in that oil.
Sizzle all of it!
Now put that cod in!
YES! Put that in there! In that pan!
And...
When that is finished cooking,
I want you to sit there and eat it!
Every dropp of it!
WHY are you smiling?
I didn't do a thing!

My Collard Green Romance
At one time...
One would have to beg grocers
To get collard greens in their stores.
Now the major food chains,
Have them propped up like kings and queens...
Among the lettuce, cabbage and corn!
They have obtained such notoriety today,
You have to have patience when someone
Grabs the last bundle.
And that person would not have admitted,
A leaf of a collard green bush in their neighborhood!
I saw these times coming.
'Cleo' didn't have the market on this!
When I finally can find Collard Greens...
Stocked like precious gems near the avacados.
I go to the suburbs.
Pig feet, chitlins', hamhocks, snouts and hoofs,
Are there!
Like it's a Negro Christmas going on!
Or...
Someone's been passing around my grandma's recipes!
When I cook my Collard Greens...
I season the water with dashes of salt, pepper
And garlic powder.
I slice one vadalia onion and a small potato.
I add three teaspoons of apple cider vinegar,
One teaspoon of lemon juice.
Two tablespoons of Olive Oil...virgin!
Cover and bring this crap to a boil.
Fill kitchen sink for the Collard Green bath.
This is where the true romance begins!
With baking powder, salt and celery seasoning...
Gently lift your Collard Greens and place them,
Stalk first into the warm and inviting water!
Rub each leaf between your hands under the water.
And while you are there...
Alone with your Collard Greens,
Glad you did not have to go to battle to get them.
You rinse them and begin to slice their leaves,
Grabbing them into a bunch...
And placing those cut leaves in a bowl.
When this task is done,
Put those greens in a pot that, hopefully...
Smells like an exotic preparation for royalty!
Turn down that boiled heat...under the pot!
To medium cook...
And let them do so for about 45mins to an hour.
Never rush cooking Collard Greens.
Oh...
When I want my Collard Greens,
To taste better than any on the scene!
I use baby smoked turkey butts.
In the boiled prepped water,
With the other sizzling seasons!
Any turkey butt will do...
But those baby butted turkeys,
Make gobbling up Collard Greens so delicious.
Enjoy!

Fast would be quick and do put salt,
But pepper I hate and love,
Better is butter than ice.

Before' The Beans
Take one turkey butt,
And put it in boiling water.
Make sure you had put in olive oil first.
With a little butter, oregano and basil leaves.
Then add two tablespoons of soy sauce.
A pinch or two of brown sugar, salt and red pepper.
20 minutes!
That's all you want to give it 'before' the beans!
Speckled Butter Beans.
With kidney and black eye peas.
Add them with sliced carrots and celery.
Turn down the heat,
To medium for approximately 45minutes.
And serve this with brown rice.
If you are into chicken...
Fried wings would be delicious.
For the better of the best tastes,
The 'smoked' turkey butt is great for that!
NOTE: 'Yes' this is my own original recipe.
Enjoy!

I Have Learned To Live Alone.....
i always know how to create a happy world
i do not have to wait for a designer of
a happy interior
there is no place for a home maker here
i can manage
i cook a stew of happiness here
put them in a bowl
there is no recipe or choosing of
ingredients or even
measuring the quantities of salt and pepper
to be put there
whatever is available
i cut and make part of the menu
if it is hard, i soften it
if it tastes bland, i add salt and
seasoning
and if i want it sweeter
i do not have to ask for an opinion
i put whatever is my
dream and liking
i have learned to live alone
and happier this time
you must see me
perhaps next year
and i will not invite you
anymore
to enter my
new house
if you give me a ring
i will not answer it

Thing Language
This ocean, humiliating in its disguises
Tougher than anything.
No one listens to poetry. The ocean
Does not mean to be listened to. A drop
Or crash of water. It means
Nothing.
It
Is bread and butter
Pepper and salt. The death
That young men hope for. Aimlessly
It pounds the shore. White and aimless signals. No
One listens to poetry.

The Fish Year
Marico brought back a tank with salt water from Brazil,
Wnetta bought small stones and water plants from pet store,
The red fish and black fish were got from
Hua’s backyard pond,
After Chris checking the filter
and water temperature,
everything is set,
and the fish is ready to grow and bred.
Gundi feeds the fish everyday,
and watches them day and night.
The red fish swim up and down,
The black fish swim down and up,
The green water plants swing their long leaves
upside down.
We can hear the talk from the tank:
One lady, two ladies, three ladies…
One man, two men, three men…
American, German, Chinese, Brazilian,
Indian, Russian…
The fish is counting! ! !
Counting the people in the lab!
Maybe they learned the counting from Gundi,
Gundi is a great mathematician,
She always counts when she watches them:
One fish, two fish, three fish…
Red fish, black fish, red-black fish…
That’s our first fish year,
we expect to have the second, the third,
and then for ever.

My Love (2)
I love to undress it,
but sometimes I can't wait,
and have it from the oven,
on a steaming hot plate.
It likes to be soaked
with butter, beans, or peas.
Oh, the scrumptious potato,
it does like to please.
But it also plays it cool
in front of the salad.
It knows how I like it
when she teases my palate.
But to be honest I prefer it
when it's wallowing in gravy,
Mmm, those tasty hot potatoes
will drive anyone crazy.
Doesn't it smell voluptuous
with salt and vinegar
when dressed in an open
newspaper wrapper.
And when it's fluffy and soft,
with milk and butter,
it's so seductively adorable,
there's nothing better.

Simplifying Life
back to the basics now
when it is hard soften it
when is dry
wet it
when it is too hot
wait
when it is bland
put a little salt
or a pinch of sugar
if you want it a little bit sweet
or sour
then use a little vinegar
or
add some drops of lemon
a cube of seasoning
or to appease the tongue
put the black pepper
or the chili sauce
when things are frozen
thaw it
it is just like life
when things get rough
my dear
be tough

Fussy About Food
I’ve always been really fussy about what I eat,
But I’ll tolerate most foods, if the cook cheats!
It really depends on how a food has been cooked,
Whether or not, it has a place in my good books.
Examples of my some of my most hated foods,
Are sliced roast beef and apples that are stewed.
I’ll eat beef that’s been minced up into a pie,
And apples diced into a crumble are also fine.
Fresh coriander leaves, I definitely will not touch,
But cooked in a curry, I don’t mind them so much.
On potatoes that have been boiled, I’m not that keen,
But eating mashed potato or chips, I can be often seen.
Egg and cress sandwiches, by me, are never approached,
But I love eggs that are hard boiled, fried or even poached.
I dislike the taste of carrots that have been picked fresh,
But with the taste of tinned carrots, I’m really impressed.
I’m not so keen on either petit pois or garden peas,
But with the taste of mushy peas, I’m very pleased.
In pies and pasties, I hate to have a filling of cheese,
But I’ll devour a slice of cheese on toast with ease.
I’ve been a fussy eater pretty much all of my life,
And, caused my mother much trouble and strife.
When I was small, I often left much of my dinner.
My mum often worried that I would get thinner.
Like many other children, my main course
Often ended up, smeared with tomato sauce.
The enjoyment of a meal, this often improved,
And frayed tempers were also often soothed.
If there was a certain food, which I did really hate,
My mum would still insist putting it upon my plate.
Even with it on my plate, I still didn’t like the taste,
So that particular food would inevitably go to waste.
As I’ve got older, I’ve acquired an improved appetite,
Much to my mother’s extreme relief, and total delight.
Now, as an adult, my dinner plate is often cleaned,
And, hardly ever is a single morsel left, to be seen.

Heat It In The Kettle
Mix and blend before you can,
Feed me!
Heat it in the kettle then,
Feed me love!
Mix and blend before you can,
Feed me!
Heat it in the kettle then,
Feed me love!
Mix and blend before you can,
Put in the potatoes.
Mix and blend before you can,
Add the tomatoes.
Heat it in the kettle then...
Use chopped beef.
Or any kind of meat.
Take that homemade bread out of the oven.
Thickly slice.
Butter it nice.
Take that homemade bread out of the oven.
Thickly slice.
Butter it nice.
Mix and blend before you can,

Bass Lake (2)
Through the Woods
along the winding road
we arrive at Bass Lake
just in time for the summer break
Such clean sweet water
fresh as fresh can be
and you do not have to think
That water we can drink,
you and Me
So we all run to the end of the Dock
and jump in the cold water, awaiting the Shock
we swim for Clams,
and watch the Fish watching us
no worries the Fish don't Fuss
But having Fun, and swimming all day
Takes it out of you in a funny way
So we head up to the barn, for a lie in the hay
And we go to sleep dreaming that tomorrow will be a Sunny Day
