I'm good in the kitchen. I can cook seafood, collard greens, black-eyed peas.

My Collard Green Romance
At one time...
One would have to beg grocers
To get collard greens in their stores.
Now the major food chains,
Have them propped up like kings and queens...
Among the lettuce, cabbage and corn!
They have obtained such notoriety today,
You have to have patience when someone
Grabs the last bundle.
And that person would not have admitted,
A leaf of a collard green bush in their neighborhood!
I saw these times coming.
'Cleo' didn't have the market on this!
When I finally can find Collard Greens...
Stocked like precious gems near the avacados.
I go to the suburbs.
Pig feet, chitlins', hamhocks, snouts and hoofs,
Are there!
Like it's a Negro Christmas going on!
Or...
Someone's been passing around my grandma's recipes!
When I cook my Collard Greens...
I season the water with dashes of salt, pepper
And garlic powder.
I slice one vadalia onion and a small potato.
I add three teaspoons of apple cider vinegar,
One teaspoon of lemon juice.
Two tablespoons of Olive Oil...virgin!
Cover and bring this crap to a boil.
Fill kitchen sink for the Collard Green bath.
This is where the true romance begins!
With baking powder, salt and celery seasoning...
Gently lift your Collard Greens and place them,
Stalk first into the warm and inviting water!
Rub each leaf between your hands under the water.
And while you are there...
Alone with your Collard Greens,
Glad you did not have to go to battle to get them.
You rinse them and begin to slice their leaves,
Grabbing them into a bunch...
And placing those cut leaves in a bowl.
When this task is done,
Put those greens in a pot that, hopefully...
Smells like an exotic preparation for royalty!
Turn down that boiled heat...under the pot!
To medium cook...
And let them do so for about 45mins to an hour.
Never rush cooking Collard Greens.
Oh...
When I want my Collard Greens,
To taste better than any on the scene!
I use baby smoked turkey butts.
In the boiled prepped water,
With the other sizzling seasons!
Any turkey butt will do...
But those baby butted turkeys,
Make gobbling up Collard Greens so delicious.
Enjoy!

Grateful for Traditions
Thick the gravy made did sit.
With turkey giblets tempting,
The licking of awaiting lips.
Dressing prepared,
Next to a glazed honeyed ham.
With collard greens smelling good,
As the potato salad nestled close
To chit'lins and delicious candied yams.
Pumpkin, apple and sweet potato pies...
Filled the air with anticipation,
As the black-eyed peas and rice
Were passed by!
Heads are bowed in prayer...
Giving thanks for blessings,
And grateful for traditions!
Feeding a heritage nurtured well,
When families gather...
For these feasting eating missions!
'Grandma...
Will you tell grandpa to stop talking,
And pass the fried chicken...please! '

Cook Of The House
Ground rice, sugar, vinegar, seco salt, macaroni too,
Cook of the house,
Im the cook of the house.
No matter where I serve my guests,
They seem to like the kitchen best cause Im the cook of the house,
Cook of the house.
The salads in the bowl,
The rice is on the stove.
Green beans in the colander and where the res is heaven only knows.
Cinnamon, garlic, salt, pepper, corn-bread, curry powder, coffee too,
Cook of the house,
Im the cook of the house.
No, matter where I serve my guests,
They seem to like the kitchen best.
cause Im the cook of the house,
Cook of the house.
Where the rest is heaven only knows.
Matter where I serve my guests,
They seem to like the kitchen best cause Im the cook of the house.
Cook of the house,
Cook of the house,
Im the cook of the house.

There Is A Rooster On The Roof
Someone said,
Chickens will come home to roost.
And there is a rooster on the roof,
With binoculars laughing.
'I want some scrambled eggs made,
With toast and marmalade.'
Someone said,
He was too young to fish.
But with them he went fishing,
And came back with all the fish.
'Clean it and fry it up with wild rice.
Cook some collard greens,
And that will be real nice.'
Someone said a failure will be seen.
But they are not the ones,
Eating fish and greens.
And there's a rooster on the roof,
Croaking for chickens to lay their eggs.
And the young fisherman,
Bathes in accolades!

Maiden Cook
A young pretty bride, very coy,
Entered her new house with joy;
She was highly educated, quite,
Bereft of the house-hold chores, right.
Next day her dear mother-in-law,
Beckoned her to the kitchen and saw
Her taking charge of the cooking.
The girl was aghast at the booking!
However, she made up her mind to cook,
And thought she'd take the cook book;
The menu for lunch was given,
As per the book she was driven.
Every often she ran to her mother-in-law,
And took her advice too, for she was raw.
On the dining table the fare was laid,
To partake, the other members she bade.
One by one, the items were tasted,
In appreciation, their heads nodded;
When they came to the greens to taste,
One, in a hurry got up and ran in haste,
One to the sink went to vomit,
The other took off his hands to wash it!
The girl was in a fix, with great worry,
As the mother-in-law tasted the greens curry!
‘My God'! she spit it out, and cried,
‘What is it you've done, my child'?
‘The greens, did you thoroughly wash, do tell'?
‘Yes, Ma, thrice, I did wash with ‘Surf Excel'!

Black-eyed Susan
Black-eyed susan
You make us nervous
Because were very aware that you do not care
Oh, black-eyed susan
What dont you believe in ?
No is always easier than yes
Whoo !
Black-eyed susan
You must insist :
You are a born-again atheist, oh
Oh, heavy-rings on
Bitten fingers
Black-eyed susan sometimes
Shakes to break
So, watch it
Oh ...
Black-eyed susan
Rest and do nothing
cause its the only thing that you do quite well
Aah ...
Black-eyed susan
Rest and do nothing
cause its the only thing that you do quite well
Aah ...
Black-eyed susan
Rest and do nothing
cause its the only thing that you do quite well
Aah ...
Black-eyed susan
Please remember
We were the first
We were the first
Oh ...

Nutritious
That banana cake taste,
Grandma use to bake.
And was loved?
Is gone with the deep dish apple pie.
That smothered blade steak.
Served with black eye peas,
Collard greens and candied yams.
Sometimes with peach cobbler,
With rich vanilla icecream.
That too,
Locks in memories.
Those golden brown biscuits,
Fresh from the oven.
Buttered.
And topped with homemade,
Strawberry jam.
Or that cornbread no one can resist.
That too...
Is gone with the deep dish apple pie.
And today...
As grateful as I am,
To witness the arrival...
Of another Thanksgiving Day to celebrate.
I've never seen so many butts and thighs so wide.
And none of us who ate at grandma's,
Waddled from the table.
No matter what we ate.
Or nibbled all day...
On the honeyed ham,
Turkey sandwiches, potato salad...
Turnips.
Or just to sit to sip on eggnog.
None of us who ate at grandma's,
Waddled from the table.
Or stretched spandex!
Maybe fast food is fast!
But it sure is not nutritious.
Forget delicious.
It's just addictive and quick.
That's it!
And when we ate at grandma's...
We knew something whipped up with love,
Was coming out of the kitchen.
And not to sit too long,
Waiting for a decision made to eat.
And none of us,
Who came to eat to leave...
Did a waddle from the table.
Or stretched spandex!
'Why didn't you mention,
My fried chicken? '
I didn't even get a piece, grandma!
'Next time,
Eat!
And stop running your mouth so much.'

My Shopping List
I write my shopping-list in rhyme.
It doesn’t take me too much time,
and always helps me to remember.
(I’ve been doing it since last September.)
Wholemeal bread
low-fat spread
strawberry jam
dry-cured ham
Cheddar cheese
frozen peas
free-range eggs
chicken legs
grape jelly
pork belly
lamb chops
lemon drops
fillet steak
chocolate cake
cookie mix
seafood sticks
tortilla chips
salsa dips
instant coffee
treacle toffee
dried sultanas
ripe bananas
runner beans
a bunch of greens
new potatoes
vine tomatoes
and (really urgent)
liquid detergent.
That’s my shopping-list in verse.
Not very good? Could have been worse!

I was never faithful
And I was never one to trust
Bordeline and skitzo
And guaranteed to cause a fuss
I was never loyal
Except to my own pleasure zone
Im forever black-eyed
A product of a broken home
I was never faithful
And I was never one to trust
Bordeline by polar
Forever biting your nuts
I was never grateful
Thats why I spent my days alone
Im forever black-eyed
A product of a broken home

Strange Restaurant
I said, 'I'll take the T-bone steak.'
A soft voice mooed, 'Oh wow.'
And I looked up and realized
The waitress was a cow.
I cried, 'Mistake--forget the the steak.
I'll take the chicken then.'
I heard a cluck--'twas just my luck
The busboy was a hen.
I said, 'Okay no, fowl today.
I'll have the seafood dish.'
Then I saw through the kitchen door
The cook--he was a fish.
I screamed, 'Is there anyone workin' here
Who's an onion or a beet?
No? Your're sure? Okay then friends,
A salad's what I'll eat.'
They looked at me. 'Oh,no,' they said,
'The owner is a cabbage head.'

Kitchen clash (Double Rondeau)
How difficult it is to cook
In hot summer how a wife to cook
'Take rest, shall buy food from outside'
He says with concern on her side
Wife is happy she need not cook
Happy so life runs like a brook
Variety food, pleased they look
Seasoned hot, they know kitchen's stride
How difficult
Time in hand changed is her outlook
Changed is also her old cook-look
Styleless to stylish in set glide
Makes her new with glow to her pride
She can speak on her strife to cook
How difficult
How difficult but back a cook?
Daughter visits with siren look
There, stirs in dad's heart a high tide
Sneaks'cooking has been set aside
These days mom does not at all cook'
Enough for her to word and hook
Daughter counsels mom back to cook
To be in shifty husband's stride
How difficult!
Luck is but a wheel in life-book
So such a wife can't overlook
And mom vows never to abide
Honeyed words but put them aside
Blamed wife telling herself 'to cook
How difficult! '

Cutting Greens
curling them around
i hold their bodies in obscene embrace
thinking of everything but kinship.
collards and kale
strain against each strange other
away from my kissmaking hand and
the iron bedpot.
the pot is black.
the cutting board is black,
my hand,
and just for a minute
the greens roll black under the knife,
and the kitchen twists dark on its spine
and i taste in my natural appetite
the bond of live things everywhere.

My Style
Lord, have mercy [7x]
[Chorus]
I know that you like my style [2x]
You cant get to turn you out
Everybody in the place get wild
I know that you like my style [2x]
Youve gotta drop it on your pants right now
Everybody in the place get wild
[So what you sayin]
Whats up, whats up with you girl [2x]
Whats up, whats up with you boy [2x]
Dont jock, dont jock, baby dont jock me
I drop the hotness, baby watch me
You cant, you cant, no you cant stop me
Coz Im a champ on the rep like rocky
And when I spit it trying out at Z rocks me
Got my style trademark with the copy
Right, you know my style is naughty
Right, so dont cock-block me
You like my style when Im whiling out with my gang
And I gain my fame from doing my damn thing
On a mike and I turn the stage like cocaine
And I bang them thangs like a (?)
[Chorus]
Our style lined up when we team up
JT and BEP sold the scene up
Cali to Tennessee and in between em
We the hottest in the biz
We be rolling four Hummers and a Pima
With sunset off the chi cantina
Stepped out looking fresh and clean-ah
Paparazzi put me in any magazine-ah
I got eight million ways to rockin like this
And aint nobody drop their styles like this
Ima give it to you like that and like this
And my momma always told me My babys a genius
[Chorus]
[Taboo in Spanish]
I like to keep my style on singo [singo]
Baby you can call me mijo [mijo]
I make you say Adios, mijo
[Spanish]
I make it hot for you if its frijo
It feels like somethings heating up
Timberland on the drum-drum hes beatin up
Black Eyed Peas, theres no defeating us
JT, hes rocking a beat with us
Them freaks, they want to freak with us
After the spot they tryina meet with us
They know our style is fabulous
Off the hook our style ridiculous
Ba-da-ba-da-ba-da
Whats up, whats up with you girl [2x]
Whats up, whats up with you boy [2x]
I know that you like my style [2x]
Ive been gone for a while
But Im back with a brand new style

No I dont lack ambition
Cant you see what I hate
That its you who is sicking
Locked behind iron gates
You should know
Youre falling into fiction
I can tell
Youre on some foolish mission
Youre black eyed soul
You should know
That theres nowhere else to go
My black eyed boy
You will find
Your own space and time
You call me superstitious
Tie me up with your deceit
I could never be malicious
Though I seem so bittersweet
You should know
Youre falling into fiction
I can tell
Youre on some foolish mission
Youre black eyed soul
You should know

Shake, Rattle, & Roll
Shake, rattle, and roll
(c. calhoun)
Get outta that bed, and wash those face and hands.
Get outta that bed, and wash those face and hands.
Get in that kitchen, make some noise with the pots and pans.
When you wear those dresses, the sun comes shinin through.
When you wear those dresses, the sun comes shinin through.
I cant believe my eyes, all of this belongs to you.
I believe in my soul youre the devil in nylon hose.
I believe in my soul youre the devil in nylon hose.
Well, the harder I work, the faster my money goes.
I said shake, rattle and roll,
I said shake, rattle and roll,
I said shake, rattle and roll,
I said shake, rattle and roll,
Well, it wont do nothin to save your doggone soul.
Im like a one-eyed cat, peepin in a seafood store.
Im like a one-eyed cat, peepin in a seafood store.
Well, I can look at you and tell you aint no child no more.
Way over the hill, and wigged out underneath.
Way over the hill, and wigged out underneath.
You make me roll my eyes; baby, make me grit my teeth.
I said shake, rattle and roll,
I said shake, rattle and roll,
I said shake, rattle and roll,
I said shake, rattle and roll,
Well, it wont do nothin to save your doggone soul.

Those Scoops Of Soup
Once it has been discovered,
Who's pot you've been dipping to get...
Those scoops of soup,
Served to your guests.
It is going to be very hard to convince anyone,
That cook you had fired from the kitchen...
Is not as qualified as you profess.
And you may not be aware of this...
But a great cook,
Seldom leaves recipes behind.
Not those originating from an inventive mind.
And a great cook...
Has no problems finding,
Those who are seeking something better...
They know will stay with them that is craved.
