A Date
three red chilis
on top of two sliced calamansi
beside the cup of white rice
inverted in form
the chicken barbecue is glazed
with butter
above a banana leaf
we have nothing to talk about
we eat

Mamma's Baked Chicken And Rice
YOU DON'T KNOW HOW SPECIAL AND NICE
I FELT ABOUT MAMMA'S CHICKEN AND RICE
BUT FOR ME AT THE TIME IT WAS BEYOND PRICE
EVERY DAY MAMMA'S CHICKEN AND RICE
WHEN I WAS SICK AND NEEDED YOUR CARE
WITHOUT GATTING A LASH CHICKEN AND RICE WAS THERE
THE DOCTORS TOLD YOU BLAND, AND THAT WAS FINE BY ME
CHICKEN AND RICE MADE BLAND SPECIAL FOR ALL TO SEE
AT FIRST AFTER DAY'S OF HAVING THIS SERVED TO ME
I WAS PISSED AS HELL TILL I HAD A TALK WITH MY BUDDY
EVERY DAY HE'D COME OVER TO GET ME TO PLAY
AND HE'D SEE ME FINISHING MY CHICKEN AND RICE EVERY DAY
HE SAID THAT YOUR MOMMA MUST REALLY LOVE YOU
SHE MAKES THAT EVERY DAY, AND ON THE WEEK ENDS TO
SHE GOES IT SO QUICKLY AND IT SMELLS SO GOOD
YOUR MOMMA MUST REALLY LOVE, I WISH MY MOMMY WOULD
I LOOKED AT MY BUDDY AND SAW IN HIS FACE
THE TRUTH AND THE HONESTY ALL PLAIN IN PLACE
AND FROM THAT DAY FORWARD I SMILED WHUEN I HEARD
MY MOM CALL MY NAME TO COME EAT THOSE THREE WORDS
CHICKEN AND RICE, CHICKEN AND RICE I SAY
MY MOM MADE THE BEST, IN HER OWN SPECIAL WAY
WHEN EVER I AM FEELING WSPECIALLY NICE
I WOULD ALWAYS FIND AN EXCUSE TO HAVE CHICKEN AND RICE
SO MOMMA, YOU NEEDED TO JUST HERE ME SAY
I APPRECIATE THE LOVE THAT YOU GIVE ME EVERY DAY
AND THOUGH IT MAY SEEM LIKE I AM BEING UNKIND
IF SO, I'M JUST BEING FOOLISH AND MANIPULATIVE THAT TIME
YOU ALWAYS COULD BRING OUT THE BABY IN ME
AND FOR THAT AND THE CARING THIS POEM YOU DID SEED
THANK YOU MOM, DEAR LADY FOR ALL OF THE ABOVE
AND THE CHICKEN AND RICE AND THESE MEMORIES OF LOVE

Varied Menu
Chicken and rice.
Fish and rice.
Rice and chicken.
Rice and fish.
Varied menu - 'ish!
Nice jungle place.
There's plenty of space.
Fresh clean air
But that dietary pair,
Fish or chicken
.....Not again!
So more trekking with a frown
Back to Georgetown.....

Before' The Beans
Take one turkey butt,
And put it in boiling water.
Make sure you had put in olive oil first.
With a little butter, oregano and basil leaves.
Then add two tablespoons of soy sauce.
A pinch or two of brown sugar, salt and red pepper.
20 minutes!
That's all you want to give it 'before' the beans!
Speckled Butter Beans.
With kidney and black eye peas.
Add them with sliced carrots and celery.
Turn down the heat,
To medium for approximately 45minutes.
And serve this with brown rice.
If you are into chicken...
Fried wings would be delicious.
For the better of the best tastes,
The 'smoked' turkey butt is great for that!
NOTE: 'Yes' this is my own original recipe.
Enjoy!

Banana Bread-Baked and Buttered
I recently discovered,
I was quick banana fed.
Having one sliced in cereal.
One in a milkshake.
And a few to make banana bread.
I guess the potassium agrees with me.
When I eat one on the street.
Preferring that treat over candied sweets.
And a vitamin I need...
Like C, D, E and the B's.
While trying to avoid the calories,
As I strip one and dip it...
Into creamy chocolate.
I recently discovered,
I was quick banana fed.
Having one sliced in cereal.
One in a milkshake.
And a few to make banana bread.
Baked and buttered,
With no crumbs spared!

Summer Days
love the summer days
a farm hut on the side of a hill
a bowl of fruits on the table
roasted chicken on banana leaf
upland rice on earthen jar
fresh water from the spring
a big mahogany tree for covering
your head on my shoulder
my hand on your hair
your feet above mine
under the night of stars
away from them all.

Every fresh banana leaf should eventually become a dry banana leaf.
Plain Cacophony
when i walk alone Colon
i remember being treated for free barbecue
by my sister during her student days,
(it may not be important to you but it is
to me, for it was the first time that i have
had a free barbecue
with white rice wrapped by coconut leaves)
nothing significant really like it is an ordinary day
but there is one thing that i cannot tell you
i have seen stars there,
people who shine ordinarily without anybody knowing
that they are stars in their own right,
ordinariness felt
something that pleases you when you walk
and no one knows you
independent, open, nothing significant
you become real.

Fall With Sanma Fish
the beautiful fall sky led me to lunch
Sushi restaurant in Kyoto
On Kawaramachi street @ Sanjo street
I took sanma in this season with no hesitation
sliced blue fish lying on the vinegared rice
sprincled with grated Daikon vegetable
juicy but daikon leaving clear taste
I bite sliced ginger afterward
and beer, of course
there was a lady sitting next to me at the age of 88
we had a little talk and smiled
I listened to her talk to a british couple sitting the other side
peacefully and joyfully
it happened on a fall day
At The Farm
there is this world of farmworkers
riceplanters and coconut gatherers
they have a language of their own,
their dreams so earthbound and
so unlike our sophistications,
they talk about what to eat
only for this day, their desserts
plain sugar chunks, their main
dish just plain rice, their drinks
just plain water from the well
and their feast, a bowl of
extra rice and two pieces of
dried fish, and they talk about
their sunday dance with the
banana vendors and the
charms of the housemaids
at the north end of the barrio.
simple dreams of day to
day existences of what is
just within their grasp and
hold: just today and no
peeping about what
tomorrow may bring.
and yet, i see them, they
laugh the hardest in the
fields and talk about sex
without restraints, and
i must agree: they are
happier than all of us
on this earth combined.

Bloody banana leaf, confirmation!
They had brought her here, would sing and dance
Her peers would add wood to fire
A night so divine, a wedding of time
A wedding mark in space bound for
White linen sheets spread, the banana leaves ready
She timid and anxious, womanhood journey begins
In his closet
Warrior in him, anxiety concealed
Outside they would sing
He would grab her, a beauty so delicate, a virgin so pretty
They would sing and drums beat, a night in hearts would stick
She would submit to him, her world, where none had walked
In crescendo blood would get away, she would moan
In delight she would pull and wrap blood in the banana leaf
Her trophy, the bloody banana leaf
Confirmation stamp, virginity preserved for show!
Happily after they would count moons and sunsets.

The Tra La La Song
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
One banana, two banana
Three banana, four
Four bananas make a bunch
And so do many more
Over hill and highway
The banana buggies go
Comin' on to bring you
The Banana Splits Show
Makin' up a mess of fun
Makin' up a mess of fun
Lots of fun for everyone
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Four banana, three banana
Two banana, one
All bananas playing in the bright warm sun
Flippin' like a pancake, poppin' like a cork
Fleagle, Bingo, Drooper an' Snork
Makin' up a mess of fun
Makin' up a mess of fun
Lots of fun for everyone
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Tra-la-la, la-la-la-la
Two banana, four banana
One banana, three
Swingin' like a bunch of monkeys
Hangin' from a tree
Hey there everybody
Won't you come along and see
How much like banana splits
Everyone can be
Makin' up a mess of fun
Makin' up a mess of fun
Lots of fun for everyone

In From The Cold
In from the cold.
They have not chosen me
they have chosen salami
for breakfast, only
because I’m a thin sliced
chicken breast.
Have they no taste!
Bread crumbs and spies
sitting outside eating salami
on crusty bread,
miles away from real butter.
While just around the corner
there is a deli
selling salt beef and pickles.
Have they no taste!

Ode to Chickens
An Ode to Chickens
Oh chicken, oh chicken,
With orange little feet,
All white and fluffy,
So good to eat,
Oh chicken, oh chicken,
I will get you so fat,
Then I will kill you,
And eat you at last

Butter
Pull me from the toaster
Straight into the roaster
Fill my head with the stuff
Brightest dreams are made of
Bringing me down again
Bringing me down again
Bringing me down again
Bringing me down again
Duh
Promising the big guns
Reward when the light comes
Screaming from the damage done
Screaming from the damage done
Bringing me down again
Bringing me down again
Bringing me down again
Bringing me down again
Duh
Butter me up, butter me up
Butter me up, butter me up
Butter me up, butter me up
Butter me up, butter me up
Butter me up like I know you will
Cover it up like I know you will
Better yourself like I know you will
Breaking the trust like you always will
Be good for it, you never will
Be good for it, you never will
Be good for it, you never will
Be good for it, you never will
Butter me up, butter me up
Butter me up, butter me up
Butter me up, butter me up
Butter me up, butter me up
Duh
So you think you got the best
Thought I was like all the rest
Reaping from the damage done
Reaping from the damage done
Bringing me down again
Bringing me down again
Bringing me down again
Bringing me down again
Duh

Into White
I built my house from barley rice
Green pepper walls and water ice
Tables of paper wood, windows of light
And everything emptying into white.
A simple garden, with acres of sky
A brown-haired dogmouse
If one dropped by
Yellow delanie would sleep well at night
With everything emptying into white.
A sad blue eyed drummer rehearses outside
A black spider dancing on top of his eye
Red legged chicken stands ready to strike
And everything emptying into white.
I built my house from barley rice
Green pepper walls and water ice...
And everything emptying into white

Home Sweet Home
sunday on a home sweet home
from the city
to this little nipa hut
on top of a hill
that father built
where the guava trees are filled
with ripe fruits
where i climb and gather and taste
the sweetness of its pink flesh
where the carabaos rest
in the coolness of mudholes
where i take my ride on them
in the river nearby
on crystal clear waters
where some fish swim on shallow waters
inviting me to fish and catch them
for lunch of pearl white glutenous rice
and with banana leaves as plates
and some wild chicken's barbecued breast
and with my bare hands and
some childhood friends
we shall take this simple feast

The Sounds Of Summer
it is the air that blows the song of summer
the birds chirp and the sky is ready for their wings.
the sands of the beach are whiter
and the waves of the sea are bluer.
the mountains lush and the paths are clear.
someone waits for you on the other side
the coconut wine is bubbling and the
dance with the wind shall soon start for
a thanksgiving. The rice cakes on the
banana leaves, the pork barbecue,
the raw mangoes with shrimp paste
and the relatives from the cities are coming.
News, stories from far, bits and pieces
and poems, and more merrymaking
i heard that she is coming and i am waiting.
This time, we shall explore a new avenue
just friendship, and a lot of reminiscing
no regrets, a little glance, and then we part.

Rice
Rice.
This time,
Spare us the gravy.
Eliminate the salt and pepper.
No butter or sweetened brown sugar to add!
Serve it up to nourish.
That's all we ask.
No need for the silver placements...
Or impressive china.
Nor the water goblets or crystal glass.
It is just rice!
What else to us has been passed?
We are here to get it plain and simple.
Direct and upfront.
And without the seasoned meat,
Promised and teased.
The rice we all once thought we liked...
Had been too disguised!
And this time...
We demand to know why,
The preparation took as long as it did.
Afterall,
Hasn't it been just rice?
And if not...
What was it?
Taking too long to surprise.

Early Morning Ray Of Sunlight
the early morning ray of sunlight
is teasing the dry
leaf of the
banana
it is not at all looking
excited
it cannot fall
like the tiny
leaf of the honey
suck
le.
